Whenever someone asks me what my Hubby is like, I always say that he's like "good ol' American Apple Pie." He loves his country, baseball, history, good beer, great burgers, and being outdoors. And he is quite mischievous. Not that that has anything to do with being Apple Pie-ish, but it's worth a mention.
He does, in addition to all of this, LOVE his apple pies. He reminds me every so often how he would *love* for me to make him an apple pie, as if I could whip one from scratch out of thin air. (insert roll eyes here). Because pie crust is just *so* easy to do.
I have made dozens of apple pies, but with refrigerated crust. And while in his eyes that is all good and heavenly, I'm a little disgruntled because I haven't managed to make a decent pie crust from scratch. The few times I attempted ended in bitter (literal) or burnt disasters. Phooey.
So I avoid making the darn thing as much as possible. Really, I'm not ready to face this fear again. I've jumped out of a plane but I don't want to make pie crust from scratch, and therefore avoid pie as much as possible. Alright? *deep breath*
Instead, in the last few years, I have been making my consolation prize for Hubby, and now my children. And with our dwindling stash of apples, I have been able to make it often. I am proud to say that a pan never lasts more than 24 hours here.
Apple Pie Crisp
Heat your oven to 375 degrees. Have your 9x12 glass pan handy
2 cups oatmeal
2 cups flour
2 cups brown sugar
Mix all three in a bowl
1 cup butter, melted. Pour over the dry ingredients. Mix thoroughly.
4 large Granny Smith Apples, peel, core, slice.
Pat down a little over half of the flour mixture and press into pan.
Layer sliced apples on top.
Sprinkle with cinnamon and nutmeg. Be generous!
1/2 cup white sugar - Sprinkle all over! Feel good about all of the energy you will have later on!
Cover with the rest of the oat flour mixture.
Bake for 40 minutes.
There you go...one day I will attempt at a pie crust again, but until then, this will have to do.
But, I knew I hit the jackpot when my eldest child agreed that this was the best version he had eaten.
I wonder if his future wife will describe him as "All American Apple Crisp"?
